I did something stupid and now the views (not the messages or accounts themselves) of nearly all my mail folders have changed.
1) Does Outlook keep these settings in a separate file? (I could restore from a backup image).
2) The view settings of my inbox are still OK, as I want them. Is there a quick way to set the views of all other folders the same?

1) The view settings are stored in the .pst file itself, as far as I know.
2) Activate your Inbox.
Select the View tab of the ribbon.
Click Change View > Apply Current View to Other Mail Folders...
Select the top level folder (your Personal Folders or Mailbox).
Tick the check box "Apply view to subfolders"
Click OK.
If you'd like to reset all folders to their default views, losing ALL view customizations, you can do the following:
Quit Outlook.
Press WinKey+R.
Type outlook /cleanviews
Press Enter or click OK.

That worked! But not for Drafts, Sent Items and Deleted Items, see Inbox.png and DeletedItems.png How to fix those?

Those three are not considered to be mail folders since they can contain items of different types. And do you really want the same view for Sent Items as for your Inbox?
I guess you'll have to select one of the available views for those folders or customize them manually.

Yes, but when I customize the columns I want to see (like in inbox view) they are greyed out. So how to ungrey them?

You are right, the view shown in Inbox changes to the view shown in Deleted items if e.g. the column "subject" becomes too wide. Narrowing the relevant columns brings back the view shown in Inbox.
So problem, more or less, solved.
