After the various suggestions offered here, I finally decided to make a pot of ham and beans! It is a simple process. Thaw the ham, dump it into a pot of water, add navy beans <previously brought to a boil and then allowed to finish soaking for approximately two hours> along with plenty of onion and pepper. We add salt if needed when the food is served, not before. Cook this on simmer for a few hours until the ham is tender and the beans are fully cooked. It ended up being a very tasty way to use this last ham!

My favorite way to use up ham is adding almost as a condiment in pasta, salads, and soups.
For a quick pasta dish, saute onions and ham in olive. Cook pasta and toss with the onions and ham. Use enough olive oil so you don't have to add butter or any other fat. Put in salt, pepper, cheese as desired.
In Salad, saute as above, with whatever other veggies and toss with lettuce or beans or whatever you fancy.
My favorite soup is lentil or split pea. Just add some of the ham to the lentils or peas!
I love ham!
