There is an email address from which I have received emails to two separate email accounts that I have set up on Outlook. In one account, when I receive an email from the email address, the full name of the sender appears in the From field. However, when I received emails from this same email address to another email account I have set up in Outlook, only the sender's initials show up in the From field.
To clarify what I am experiencing, consider the following:
When I open an email sent to the first account, the name shows up as:
John Smith <john.smith@domain.com>
However, when I open an email sent to the second account, the name shows up as:
J S <john.smith@domain.com>
Why is there this discrepancy?

I think that the issue is with in the sending email set up.
Most email programs display what is in the Users Info field when sending emails.
It has nothing to do with what you have within Outlook, except when you are entering their email address in the "to" field.
Look for the "Display As" field within Contacts for this "to" field display.

This person exists as a Contact in my Outlook contacts. However, I do not have the email address in question as the email address assigned to this contact (the individual has multiple email addresses), so the Display As field is not likely relevant for this email address.
The sender is sending emails from an Outlook POP 3 Account, where his full name is displayed under User Information / Your Name.
The full name displays when I received emails from this email address to one of my email accounts, but not to one of my other email accounts.

The contact is in my Outlook Contacts, which I use for all of my email accounts, including both the email account that display the name correctly and the one that does not, all of which are registered accounts in Outlook.

He needs to check ALL of his accounts, but I would say that, the account is not showing the full name does not have the full name in THAT email account set up on his machine.The sender is sending emails from an Outlook POP 3 Account, where his full name is displayed under User Information / Your Name.
It may help us if you were to post a screen shot of these email listings?

I have discovered what the issue is. When he sends an email from his laptop through Outlook, it displays his full name, regardless of which of my email addresses he sends it to.
However, when he sends an email through his iPhone, it displays his initials only, regardless of which of my email addresses he sends it to. This is because of the way his name is displayed in his phone's Mail settings.
