Is there a way to specify the date format to be 'YYYY' only? PP2003 doesn't give me option for it to be just the year (it includes full dates with different formats but not YYYY).

I don't know how copyright works in your country, but in the UK the copyright symbol doesn't really need a date after it, since it is based on a number of years for each type of medium. See this UK Copyright Law Fact Sheet...
