Hi Bob,

On the Insert Ribbon > Hyperlink.
(Alternatively, just right click on the text and choose Hyperlink...)

I guess the iconography was just different enough that my eyes didn't recognize it.

BTW: My copy does not show the word "hyperlink" but "link" instead.

Formatting as a hyperlink (underlined, color) is done through the Hyperlink character style which is built in. It is applied by default to any active hyperlink. You can modify this style.

There are autoformat as you type rules which by default create a hyperlink when one is typed. These may not be triggered with pasted text. With pasted text, if you put the insertion point at the end of a URL, it will be recognized and formatted.

Creating a hyperlink is on the Ribbon under the Insert tab.
I always use Ctrl+K, though.

For links within a document, I generally use Cross-References to link. This, by default, does not appear to be a hyperlink but acts as one. Cross References are under the References tab.

What shows up depends both on the version of Word and on your screen size/resolution. Word alters the Ribbon to fit the page. For instance, on my Word 2010, under Insert, there is a Links "group." If I go to a smaller window, that group becomes a "Links" dropdown giving access to the commands in that group. The Mac has different icons for many things.
