I am belatedly upgrading our Office versions from 2010 to 2019.
Is it practical/safe to instal 2019 alongside 2010 to allow copying of customisations - e.g. open up Excel 2010 and Excel 2019 at the same time?

Yes, you can install Office 2019 and keep Office 2010. Office 2019 uses Click-to-Run, so the installation is completely separate.
(But I suspect that Outlook 2019 will replace Outlook 2010)
The default version is now 64-bit, but I recommend installing the 32-bit version. The 64-bit version has relatively few advantages but a lot of compatibility problems.
