Mung Bean sprouts vs. Romaine lettuce

My friend Rick stayed over 2 nights. He has a 30-year-old degree in organics something-or-other, starts with "B"; could be Botany or Biology.
We discussed bean sprouts vs. lettuce (as input to one's life and diet).
Rick pointed out that beans are a legume whereas lettuce is a grass (I think I got that right)
At any rate, beans are a source of protein, and not only protein, but complete protein, whereas lettuce is cellulose and pretty well lacking in value as a food.
So my reasons for sprouting beans now include:
  1. It's protein rather than cellulose
  2. I never run out of "fresh greens" for salads
  3. It beats lugging lettuce (which is essentially gallons of water) home from the store.
  4. Waaay cheaper than lettuce
  5. It's a fun activity that gets me away from hours sitting at a keyboard
