I'm making sourdough bread now, and I've made yeast bread before - kneading the dough after the first rising, sore hands, wrists etc.
Now I'm making a foray into no-knead bread.

Most of my hair had already fallen out by the time I learned that mousse is spelled with two esses

One of the reasons I don't bake bread more is I don't plan ahead enough -- I don't think increasing the time to produce a loaf to almost an entire day would help matters.
I do recall my mother experimenting with a no-knead bread recipe that appeared to be more like a batter than a dough, but she only made it once or twice before going back to the old tried and true version that needed kneading.

That was my conclusion, and more. I went on a whole wheat sourdough breadmaking "tour" last year for several months, and the time and energy and especially water use in the cleanup led me to the conclusion that if I can buy high quality high protein bread from a store, I'm better off from a time and resource standpoint.HansV wrote:Or buy a bread at a quality bakery. BUT, when you buy your bread premade, you can not make a pan or two of the great Cinnamon and/or Pineapple rolls.
These will get you started each morning with the nice hot cup of Coffee or Hot Chocolate?

That shouldn't inhibit one, or even two, from making fresh hot crispy crunchy bread straight from the oven for guests. Laced (*) with grated carrot, or raisins, or both.
I'm with you on the fresh-and-hot first thing each morning.

More seriously, sourdough whole wheat bread rises pretty slowly, and has to rise, be punched down, and rise again, so the process takes about six hours. I don't fancy getting up at 1 AM for fresh bread at 7 AM.

I am going to have dig out my recipe for bread. It takes very little needing, just punch it down.
I made the bread in the afternoon, but the cinnamon and pineapple rolls I put in the pans, then let them raise in the frig over night and they are just right for popping in the oven the next morning while I get coffee made and ready for the new day.
