Simplified “No-Knead Bread”

Post by ChrisGreaves »

Full details on one of my web pages.
I obtained the basic recipe from the New York Times.
Then I trimmed it down.
I have the knack now, using a tub of my own DRY mix (flour, yeast and salt), a measuring cup.
I mix the dough around 7am, turn it around 11, and have bread by 3pm, all with no kneading, no mess.
Of course, I add a teaspoon of ground pepper to make pepper bread to eat with pasta or salads.
Of course, I add a handful of raisins to make raisin bread for afternoon tea.
On yesterday's canoeing trip I took a flat loaf, sliced horizontally, and smeared with Brie on one side and Terrine of Ostrich (!) on the other. Made Fred's store-bought sliced-bread ham-and-cheese look positively childish.

So if it's not real Vegemite, what is it?

Hans is quite correct.
It is "plastic imitation stuff" (although I would have phrased that differently).
You won't catch me eating real Vegemite and real Brie, not while I'm on my weight-loss diet.
Nor real bread, either.
Yum!

[consults the jar of Vegemite in the pantry cupboard]
average serving size 5g
energy 40kJ
fat less than 1g
carbohydrate less than 1g
sugars less than 1g

sounds like serious weightloss food to me ... but yes, it does mean less butter on the toast before the Vegemite goes on.

'scuse me? Margarine is quite popular in The Netherlands - more popular than butter, actually.
Best wishes,

Hans, That's the downside of the migrant experience. Those who left keep their values, traditions and beliefs from that time and pass those down to their children. They miss out on the changes that happen 'back home'.

I don't know when you emigrated. Margarine was already popular in my youth, in the 1950's. Many people were rather poor in the post-WWII years, and couldn't afford butter, which was - and is - much more expensive than margarine. In fact, margarine has become so predominant that it's commonly called "butter", and the real thing is called "real butter" or "cream butter" to distinguish it from margarine
Best wishes,
Hans

My parents emigrated, I was born in Australia. But, yes, my parents talk about the immediate post war period as one of deprivation. When he arrived in Perth, my father became a milkman and was one for about 15 years. So we were able to have plentiful quantities of dairy products. I have always thought that this was my parents fulfiling the memories of pre war Holland.

But most of the time when I make a comment about my heritage and the link to dairy food it is part joke. I use it to blame somehting other than me! I just love all dairy foods and have to make an effort to control the intake or else I'll have to go on Chris' wieght loss eating regime!

Here's a different clip - talking more about the kneading and handling of dough from The Guardian.

Good. The food-skimming skills I learned during my terrible years half-staved to death in a wheat-belt rectory have paid off!
My mother baked daily, for always there were PCC meetings, Ladies Guild, Mothers union etc.
One day she placed in the refrigerator a tray with 13 rum-balls and a note "There are 13. I've counted them!".
On her return she found that the note had been adjusted in her math-brilliant son's hand-writing "You're wrong. There are twelve".
I was forced into this life of crime by un-thinking, un-feeling parents.

P.S. If I recall correctly, this was the last time she tried to punish me. I'd outshot her height during my previous 3 months away at high-school.
She nearly had a heart attack laughing.
