Why does beer have a 'head' but cider doesn't? I know that cider does when it's poured, but it very quickly dissipates while (providing you have a clean glass and proper beer) the head on beer stays pretty much to the last? (This - - looks like beer!)

It looks like the ingredients needed to create a head come from the grain, and Cider isn't made from grain.
