A couple of years ago we were on holiday in Austria, one evening in the town there was a festival and inevitably alphorns featured. When they'd finished playing, the crowd were invited to have a go so my eldest stepped forward and played a simple arpeggio, much to the amazement of the band we didn't let on that he can play the trumpet

CHOCOLATE PATE

4 oz. semi sweet chocolate (I use the Bakers squares)
½ cup butter

4 egg yolks
½ cup white sugar
2/3 cup unsweetened cocoa
1 cup whipping cream (whipped)

1) Melt chocolate and butter in microwave (approximately 2-3 minutes)
2) Add sugar and stir
3) Add cocoa and stir
4) Add egg yolks – one and a time – stir after each one
5) Fold in whipped cream
6) Whip everything with electric mixer for 1-2 minutes
7) Line loaf pan with plastic wrap and pour mixture into pan – Refrigerate for at least 6 hours

Serve with any of the following: icing sugar sprinkled over top
Raspberry sauce
Whip Cream and orange segments
Strawberries etc.
