We accidentally deleted the Unread folder. Can we restore it again by creating a new folder and then rename it unread?

Unread Mail is a search folder, not a standard folder. You can re-create it as follows:
- Select File | New | Search Folder...
- Make sure that Unread mail is selected.
- Click OK.
- Select File | New | Search Folder...
- Make sure that Unread mail is selected.
- Click OK.
