Outlook 2007
In Favourite Folders pane, the user has created shortcuts to shared mailboxes by dropping and dragging the shared mailboxes into the Favourite Folders pane.
When she logs off & logs back on
Opens Outlook
The result is
It reverts back to the default view for Favourite Folders, and all her shared Inbox shortcuts are gone.

Are the favourite folders stored in a file somewhere?
As its possible this file is being deleted when she logs on/off
or anything else for me to check?

Favourites are stored in a file called <profilename>.xml (by default: Outlook.xml) in C:\Users\<username>\AppData\Roaming\Microsoft\Outlook. This file sometimes becomes corrupted.
Option 1:
Quit Outlook.
Press WinKey+R.
Type
outlook /resetnavpane
and press Enter or click OK.
Set up favourite folders.
Quit Outlook.
Restart Outlook.
Check whether the favourites have been preserved.
Option 2:
Quit Outlook.
Rename <profilename>.xml to for example <profilename>.old.
Start Outlook.
Set up favourite folders.
Quit Outlook.
Restart Outlook.
Check whether the favourites have been preserved.
Option 3:
Create a new e-mail profile in the Mail control panel.
Option 1:
Quit Outlook.
Press WinKey+R.
Type
