Is there ANYWAY to get rid of the 'Draft with copilot' icon? Searching the Web seems to indicate No….

I may be wrong but a 'draft with Copilot' icon sounds like something you are seeing in a MS application, like Outlook or Word, not Windows 11 itself.
To remove the Copilot icon from the Windows 11 Taskbar, try this:
1) open the Settings app and click Personalization
2) scroll down and select Taskbar
3) set the Copilot option to 'off''
To disable Copilot completely is straightforward if you have the Pro version of Windows 11. For the Home edition it's more of a chore, see this article:

Which version of Word? My MS 365 version 2412 of Word doesn't (seem) to have this feature BUT I have Win 11 Pro and I have used the Group Policy to disable Copilot so maybe not surprising that it's not showing on my machine?

Thank you both. I 'uninstalled' Copilot yet this icon remains.(Windows 11 Home version 23H2)

When I open a document, the icon appears is on left side of page after pressing Enter

Thank you, Stuck. I had tried going into Proofing/Autocorrect, typing, but didn't see any Copilot options; clicking on the icon never shows anything but 'draft with copilot.'
As I said, I uninstalled Copilot but somehow that icon remains.
(Since I deleted Copilot, I didn't go thru the gpedit routine, and would be most hesitant to muck around there.)

If you're not prepared to edit the registry then I think you will have to live with this Copilot prompt.
However, if you decide you do want to edit the registry then this post will help:

1) Scroll down until you get [2], under the heading 'Here's How'
2) Click the Download button
3) Once the file has downloaded, double click on it.
4) You will be asked to 'run' or 'cancel', choose 'run'
5) The registry entries required to disable Copilot will be merged into the registry
6) Reboot your machine
7) That should be 'job done'.
If you change your mind and you want to restore Copilot, use the link above again but this time scroll down to [3] and use the download option there. Double clicking on that file will again ask 'run' or 'cancel'. Choose run and the registry will be returned to its default state and after a reboot Copilot will be restored.

File > Options > Copilot.
Clear 'Enable Copilot'.
Click OK.
