Michael Pollan on "Onions"

I get shanghaied into reading books; I am currently enjoying savouring my third Michael Pollan from this set:-
(1) The Omnivore’s Dilemma - a natural history of four meals
(2) In Defense of Food – an eater’s manifesto
(3) Cooked – a natural history of transformation

Micheal tends to repeat himself, but I’m not sure whether I’m re-reading something from an earlier book or from an earlier section of the same book.
No matter.
The word “digestible” springs to mind.
A quote from “Cooked” page 130: “As soon as we have choices about how to spend our time, time is in much shorter supply”.

With three different sulfur ingredients, we should have called the onion a sulfur bomb indeed.

I have enjoyed all three Pollan books so far, and have put the rest on Hold at the library.
I have also been motivated to start my own sourdough starter plant
