Spinach vs. Lettuce

Post by ChrisGreaves »

(e,g, Romaine Lettuce)
Also Speaking of Quiche ..

I am switching from lettuce to Spinach, because spinach can be eaten both raw and cooked (I'm still growing Mung Bean sprouts for raw and cooked vegetable protein).

So, I made too much spinach salad for lunch yesterday, and couldn't finish it off with the BBQ last night. [rhetoric alert] What's a chap to do?

Answer: Omelet.
HPIM5951.JPG
In the strange photo above I've dumped half the 4-egg (and milk) mixture in the pan and dropped the spinach-tomato-onion-mushroom-yellowpepper etc mixture over it.
The layer of egg mixture cooks quickly!
The salad bowl (lower-right) is correspondingly empty.
I will pour the remaining egg mixture over the fillings once I put down the camera; you can't be too careful nowadays!
The "scum" lining the egg bowl is ground black pepper that hasn't (yet) mixed in properly.
HPIM5953.JPG
Above the omelet is almost cooked. The egg-on-topped ran through most of the salad and cooked.
Some of the salad had dropped through the original layer of egg and found its way to the pan, so when I flipped over half the omelet, it peeked coyly at me and would have said "Hi There!" except that I would have retorted (it being spinach leaves) "Look who's stalking!")
HPIM5954.JPG
And here it is a table. The glorious brown bits are probably because I toss a heaped teaspoon of sugar into the egg mixture when I think no-one's looking. That way I don't have to burn the egg to get browness.

P.S. It dawned on me that the name of a piece of old sheep, as in "leg of mutton" comes from the French for sheep: Le mouton.

Yeow... that looks YUMMY! How could you eat that without inviting me........???
Awesome going Chris....:yum:

LOL - I dropped my camera the other day...fortunately only a few inches, so I have this rope strap around it now. I also insist that whoever uses it, puts their hand through the loop so if it slips, it will dangle from the wrist. Use this technique to aviod a quiche camera

To win a free :chocciebar: , complete this sentence:
The chef didn't put mushrooms in because there wasn't too ______ left.

Maybe. I think the aroma of that photograph has evoked a grammatical cul-de-sac and the need to correctly complete sentences takes on a secondary role to wanting to share a good meal. How did we get onto grammar and missing mushrooms anyways?

I think you're confusing quiche with toad-in-the-hole, and mushrooms have nothing to do with toad schools. :ouch:

One more reason to choose spinach over lettuce, spinach can be frozen while lettuce cannot! Granted, you'd probably have to use the spinach in cooked dishes but at least it could be preserved. Lettuce is a product that must be purchased fresh and used fresh! IMHO of course.

:whisper: Your omelet looks yummy!

Pick out all the spinach and throw it away. Eat the rest.

Please don't hesitate to ask any further culinary questions which are causing you concern.

O, Hi O Skitterbug!
What, then, is the secret to freezing spinach?
Rinse it, yes?
Pat it dry?
Or just toss the bag into the freezer?
Chop it up in strips first?

Hi Chris
First I'll give you a link to the details since it is easier than typing it all out. The one thing I do differently, is not let the spinach in boiling water for the full two minutes. I toss it in, stir it once, watch the color of the leaves change a bit and then dump it all in cold water.
Spin dry or use something to pat it dry. Either way, the end results are good for adding to eggs, etc. And it beats wasting it!

Thanks Skitterbug; I'll give this a try.

P.S. URL> My good friend Cindy has a great method of spinning her salad that I think would work here too. Drain your spinach then place in a tea towel. bring up the corners of the towel forming a sort of sack of spinach. Give it a whirl. Go ahead and spin it around. The water will be spun out into the towel.

Well at least we know why/how Cindy did that lovely paisley-dot pattern across her ceiling.

Oh goodness..LOL
This reminds me of when my friends pressure cooker exploded in the kitchen due to a weak spot in the locking mech.
Fortunately no-one was hurt, but the kitchen was a mess with finely shredded bits of food over the ceiling, walls and cupboards. It took a while to clean, but the kichen smelt like stew for a week or more after that!!

My dad did that, too, when he was about 45 years old. Was told by mum to "put cabbage on in pressure cooker", took lettuce out of fridge and put IT in pressure cooker (you can see where I get my brains from).
The little weight-thingy finally got plugged up with gelatinous goo and so the gasket-safety-valve thingy finally blew its brains out all over the kitchen, starting on the ceiling and radiating outwards.
Actually now I think about it, it probably had the consistence of my dad's brains ..

I get my good looks, humility, and suave charm from my mother.
