This link comes through the Farm Bureau web page… they look like they have some good ones. When I did the Cajun chicken fingers recipe, it turned out great. Try it!

It's baked, but crunchy... I loved fried chicken, but being diabetic, it didn't set well with my blood sugar. But this recipe has all the crunchiness and flavor without all the added carbs or whatever that frying adds. I highly recommend it. It does make a lot--maybe a dinner and two or three lunches. But I think you could freeze some too if you wanted.
