I found some of these in the supermarket today and would like to try cooking them.
I'm guessing that they would benefit from a long slow cook.
What do you suggest?

Are you planning on grilling them to finish them off or just cook them in the oven ??
I have 3 racks of baby back ribs (pork) in the oven right now. They've been in the oven, covered with foil, at 225 F all night (about 10 hours). I dropped the temp to 150 F at about 8 hours and will let them cook another 3-4 hours. Then I'm taking them to a friend's place this afternoon and finishing them on the grill with some smoke and barbque sauce. The only seasoning I use is salt or Crazy Jane before cooking.
