Only in North Dakota
The American Bison (aka buffalo) has had an important role in the early history of North Dakota. On the state capital grounds in Bismarck is a statue paying homage to the bison. Recently, a little snow melt during the day with freezing overnight temperatures added a bit more realism to the statue.

haha! Our local town has a "Bullthistle Festival" every August complete with bullthistle judging, king/queen/fireworks etc. Yes you might ask, the ole common bullthistle that grows wild complete with all its prickliness. Then there is Byron's a uniquely edible feast stumbled upon after a daylong hike along the Illinois River at Starved Rock State Park. After laughing ourselves silly we garnered our nerve and sampled the delicacies.
