Save all messages that are in an Exchange account
How do I save all the mail messages that are in my Exchange email account (Outlook 2010)?

Instead of typing the whole procedure out, I'll simply refer you to this page: Backup and Restore all Outlook data

Re: Save all messages that are in an Exchange account
You can create a new Outlook Data File (.pst) and copy all your mail folders to this file.
To create a new .pst file, you can use File > Account Settings > Account Settings, Data Files tab, Add..., or Home > New Items > More Items > Outlook Data File.
You can also use File > Open > Import > Export to a file (weird sequence, but it works...)
See the link provided by Rudi for more details.
