Hello. PowerPoint 2007.
If using Photoshop and exporting pictures to PowerPoint, what is the ideal size, or proportions, and file-type to export as please?

Even if your monitor supports a high resolution, many projectors are still limited to 1024x768, so I'd stay within those limits. For most purposes, .jpg is the best file format. 96 dpi or 150 dpi is sufficient for presentations.
