Although I have been able to change some of the defaults in Word 2007 by going to Word Options, there doesn't seem to be a way to change the default font from Cambria to anything else. Also, it seems that each new document opens with double spacing which I also want to change.
Is there a way to do this w/o having to change each new document?

With Word 2007 and 2010, when you change the font using the Dialog pane (click small arrow in corner of Font area), make your changes and then select the Default button, in the lower left corner.
To change the extra White space, select a paragraph marker, go to the arrow of the Paragraph area and change the before and after spacing to be 0. Then select the Default button.
