I like the side-by-side view for getting the feel of the page layout.
But I'm a little bummed that pages flip one page at a time.
In order to get the exact feel of the layout, two pages should turn at a time so the even page stays on the left and the odd on the right.
Is there a setting that will make it so?
Can you flip two pages at a time in the side-by-side view?

Do you really mean Side by Side (which scrolls two documents simultaneously)? Or did you mean Multiple Pages view? If you use the latter and resize the window to show two pages next to each other, you can scroll through the document the way you want.

Sorry for the confusion. I meant the "side by side" view, where just two pages scroll simultaneously.

You shouldn't use Side to Side for what you want.
Select Vertical in the Page Movement group of the View tab of the ribbon.
Then select Multiple Pages in the Zoom group.
Adjust the zoom percentage and/or the window size so that you see exactly two pages.
You can now scroll down seeing the odd-numbered pages on one side and the even-numbered pages on the other side.
