I've been on the phone with one of our IT guy's this afternoon and between us we made progress via another Adobe chat.
In summary, yes Acrobat Pro DC version 2019.12.20036 and higher has an issue with creating PDFs when the source file includes a Greek sigma symbol. Meanwhile I have been rolled back to version ...20034 and the issue has gone away.
Yet to be established is how to prevent Acrobat auto updating from version ...20034 and if/when Adobe fix Acrobat.

PS for Charles: The rollback on my PC involved first installing a 'base' version of the continuous release, which reported itself as version 2015.something. Once that was installed there was an (off-line) patch to apply when that was done Acrobat reported it was version 2019.12.2034. I guess that means that if you were to open Acrobat and check for updates your installation would go from the 2015 version to the latest 2019 version, which would either be ..20036 or perhaps ...20040. I suggest you DON'T try that though. I also guess that since your version seems to have stayed at version 2015 all this time it also means that it is possible to prevent Acrobat from automatically updating.
