I'm reworking an existing document in Word 2013 (previously a Word .doc, unknown version). I inserted figure captions beneath existing figures, but the cross-reference listing now has Figure 6 ahead of Figure 5, and the Figure 6 caption now has a / in the text that I did not enter, and can't seem to delete.

Hard to say without seeing the document. Have you tried deleting the captions and creating them again?

That proved to be the necessary step. Word works its wonders in mysterious ways!
